Chicken Burrito Bowl with Quinoa

Preparation Time: 15 minutes

Cooking Time: 10 minutes

Servings: 6

Ingredients:

1 tablespoon chipotle chills in adobo

1 tablespoon olive oil

½ teaspoon garlic powder

½ teaspoon ground cumin

1-pound boneless skinless chicken breast

2 cups cooked quinoa

2 cups shredded romaine lettuce

1 cup black beans

1 cup diced avocado

3 tablespoons fat-free sour cream

Direction:

Stir together the chipotle chills, olive oil, garlic powder, and cumin in a small bowl.

Preheat a grill pan to medium-high and grease with cooking spray.

Season the chicken with salt and pepper and add to the grill pan.

Grill for 5 minutes then flip it and brush with the chipotle glaze.

Cook for another 3 to 5 minutes until cooked through.

Remove to a cutting board and chop the chicken.

Assemble the bowls with 1/6 of the quinoa, chicken, lettuce, beans, and avocado.

Top each with a half tablespoon of fat-free sour cream to serve.
